Pumpkin Chocolate Chip Cookies with Caramel Glaze


One thing I LOVE about fall is cooking with pumpkin :)  It just doesn't feel like fall to me without making these cookies with pumpkin, cinnamon, and caramel glaze all wrapped up into one cookie!  I hope everyone enjoys these cookies as much as I do and hope you are having a lovely fall!


Ingredients:

1 cup butter, softened
1/2 cup white sugar
1 cup brown sugar
1 cup pumpkin
1 tsp vanilla
1 egg
3 cups flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp pumpkin pie spice
1/4 tsp salt
1 cup milk chocolate chips

Icing:
3 tbsp butter
1/2 cup brown sugar
1/4 cup milk
2 cups powdered sugar

Directions:

1.  Cream together sugars and butter, then add pumpkin, vanilla, and egg.
2.  Sift together dry ingredients and add to mixture.
3.  Add chocolate chips and bake at 350 F for 12 minutes.
4.  For icing, heat butter and sugar in medium saucepan until it bubbles and thickens.  Cool for 10 minutes.
5.  Stir in milk, add powdered sugar, and beat until smooth.
6.  Frost cookies after they have cooled.
