Pumpkin Bars
I love making everything pumpkin the fall :) My husband absolutely loves pumpkin, and we both decided it was time to make an amazing pumpkin treat to munch on! Who can say they don't love deliciously sweet pumpkin and fluffy whipped cream to top everything off?? I don't think it's possible.... Enjoy!

Filling:
4 eggs, beaten
1 (29 ounce) can pumpkin
1 ½ cup sugar
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ginger
½ teaspoon cloves
2 (13 ounce) cans evaporated milk
Topping:
1 yellow cake mix
1/2 cup butter
cool whip or whipped cream
Directions:
1. Combine all filling ingredients and pour into a 9 X 13 pan.
2. Sprinkle the dry cake mix over the top of filling. Drizzle melted margarine over the top of the cake mix.
3. Bake at 425 degrees for 10 minutes. Then reduce oven heat to 350 degrees and bake another 50 minutes. Serve with whipped topping.

ReplyDeleteI love pumpkin anything too. I can't understand people who don't like pumpkin pie -- yes, they DO exist! Fall is great because of all the seasonal pumpkin in the markets. Nice recipe!

ReplyDeleteBecause of PFB from foodbuzz, I have been thinking about pumpkin a lot lately! :) These bars look amazing, and I think the topping with yellow cake mix is definitely smart!
